Tunisia is consistently among the largest olive-oil producers and exporters in the world, with the region around Sfax at its centre. The dominant Chemlali variety thrives in hot, arid conditions and gives a soft, fruity oil. Historically much of it left the country as anonymous bulk oil to be blended and bottled in Europe, but Tunisian estates are increasingly winning international awards for their own labelled single-origin extra virgins.
