Profile

Named for its curved, goat's-horn fruit ('cornicabra'), this is the signature olive of the Montes de Toledo in central Spain and the country's second most planted variety. Its oil is aromatic and well-structured: ripe apple and avocado lifted by green herbs, with a firm bitterness and pepper and notably good oxidative stability thanks to high oleic acid and polyphenols. It is a confident, balanced oil that keeps well.
