Arbosana is, with Arbequina and Koroneiki, one of the three varieties bred and selected for super-high-density mechanical groves, now planted across Spain, California, Chile and Australia. Its oil resembles Arbequina but with a little more structure: ripe fruit and banana with green almond, and a slightly firmer bitterness and pepper. It ripens a little later than Arbequina and is valued for consistent, approachable, fruity oils at scale.
Soft but structured: ripe fruit and banana, green almond, a little more pepper than Arbequina.
Picked from October into November; a touch later than Arbequina. Buy the freshest crop you can find — and check the harvest date on the bottle.
